CWRU’s Bhagya Nallaperuma co-authors review on sustainable starch alternatives
Bhagya Nallaperuma, safety services specialist in Case Western Reserve University’s Department of Environmental Health and Safety, recently co-authored a review on sustainable starch alternatives, which was published in the Journal of Future Foods.
The article—titled “Exploring the potential of underutilized starch sources as nutritive alternatives to refined wheat flour: A review”—highlights sustainable and nutrient-rich starch sources as promising alternatives to conventional wheat flour.
